Walmart Skim Milk is fine, no info on others
Raw milk is fine
I will add more as I hear from customers.
1) You can use raw, pasteurized, homogenized, goat or cow milk to make cheese. Click here for a local fresh milk supplier.
2) You can use powdered milk per the recipe below.
3) Ultra-pasteurized milk cannot be used to make cheese. Not all areas label UP milk. You need to call the dairy. The UP/UHT process kills just about everything in the milk, including taste and the enzymes need for milk to form curds. But, if it is all you can find you may want to try one of the recipes below. If it is shipped over a couple state lines it is probably UP. If the expire date is more than 2 weeks it is probably UP. Call the dairy.
4) Use the freshest milk you can.
5) Dairy farmers can sell raw milk - But you cannot tell them it is for human consumption. If the farmer drinks the milk regularly, and you age your cheese for a minimum of 60 days, it should be safe to use.
Liquid plus Cream (You can try this with UP milk)
1 gallons 1% fresh milk
1 pints whipping cream
1/2 tsp calcium chloride
Powdered Milk - Use only name brand non-fat powdered milk
Mix per instructions on box
1 pint whipping cream per gallon of milk
1/4 tsp calcium chloride
Powdered Whole Milk
Mix per instructions on box
1/4 tsp calcium chloride per gallon
Let sit overnight before using
Part fresh/ Part non-fat powdered milk
1 gallon water
2 cups non fat dry powder milk (use a name brand)
1.5 pints whipping cream
1 gallons 1% fresh milk
1 tsp calcium chloride
